When I first got married and moved into my own home with my husband, I vowed that I would try a new recipe every day and always could healthy meals.
Boy, did that go down the drain quickly! Do you know how hard it is to cook healthy meals for a grown man who only eats hamburgers and chicken tenders? Ugh...he doesn't like veggies! I swear, it's like trying to feed a five year old.
At least, I've been able to expand his taste buds gradually. He eats rice now, which is one of my favorites as you will see in the recipe below!

Bangin' Good Shrimp


Sauce Ingredients:

For the Shrimp:
  • 1 lb large shrimp, shelled and deveined (weight after peeled)
  • 2 tsp cornstarch
  • 1 tsp canola oil
  • 3 cups shredded iceberg lettuce
  • 1 cup shredded purple cabbage
  • 4 tbsp scallions, chopped

Directions:

In a medium bowl, combine mayonnaise, Thai sweet chili sauce and Sriracha. Set aside.
Combine lettuce and cabbage and divide between four plates. Set aside.

Coat shrimp with cornstarch, mixing well with your hands.

Heat a large skillet or wok on high heat, when hot add oil. When oil is hot add the shrimp to hot pan and cook tossing a few times until cooked through, about 3 minutes. Remove from pan and combine with the sauce coating well.

Place shrimp on lettuce and top with scallions.

See? So super easy and delicious!
Now, like I said, my husband does not like veggies. So, instead of putting it on a bed of leafy greens, I served mine over rice. YUM!!! You should try it that way too.
I'm also super pumped about getting my husband to eat this meal because he doesn't like shrimp unless it's deep fried. Small win!
